Central Connecticut State University
To accommodate the addition of a new $82.3 million, eight-story, 220,000 square foot residence hall, Crabtree McGrath Associates designed the foodservice component of a new dining hall adjacent to Central Connecticut State University’s existing residential buildings. This innovative foodservice facility allows the campus to support an increase in on-campus students resulting from the residence hall expansion. The standalone $10.3 million, 22,000 square foot foodservice dining facility includes areas for food preparation and serving and accommodates dining for approximately 1,200 residents.
The multi-level addition embraces the area’s topographic realities with receiving, storage and employee support located on the upper level, and the kitchen, servery, and seating areas assigned to the lower ground level. The market-style servery offers an array of dining platforms to include three, on-demand cooking venues, as well as several hot and cold offering service points.
Each food station permits staffing level changes and can easily adapt to trends and serving preferences. Organized into three distinct spaces, the 520-seat dining area allows for flexibility and orderly control of traffic-born noise. One dining area transforms into a meeting space, complete with audiovisual support and lighting controls, and an outdoor patio and seating area provides for outdoor dining and meeting spaces in warmer months.
